Ingredients: 2 Cooked Lemon Marinated Chicken Breasts, diced; ½ Cup Olitalia EVOO Mayo; Salt, to taste; Freshly Ground Black Pepper, to taste; 2 Cups Celery, diced; 1 Green Apple, diced; Optional: 2 Tablespoons Fresh Chives or Ramps, finely diced

Instructions

Dice the chicken, celery, apple, and optional chives or ramps.
In a large mixing bowl, combine the chicken, celery, apple, and herbs.
Add the Olitalia EVOO Mayo and gently mix until all ingredients are evenly coated.
Season with salt and black pepper to taste.
Cover and refrigerate for at least 30 minutes before serving to allow the flavors to develop.
Serve on toasted bread, croissants, wraps, lettuce cups, or alongside crackers and fresh vegetables.
Notes: The flavor continues to develop and improve after a day in the refrigerator, making this an excellent make-ahead recipe. Store in an airtight container in the refrigerator for up to 3 days. For extra brightness, add a squeeze of fresh lemon juice just before serving.
