Ingredients: 3 Green Peppers, sliced into strips; 3 Red Peppers, sliced into strips; Olitalia Extra Virgin Olive Oil, as needed; Salt, to taste; Black Pepper, to taste; 1 Yellow Onion, sliced; 6 Sweet Fennel Sausages

Preheat the grill to medium-high heat on both sides.

Slice the green and red peppers into strips and place them into a bowl. Season with Olitalia Extra Virgin Olive Oil, salt, and black pepper. Toss to coat and set aside.

Slice the yellow onion and place it into a separate bowl. Coat lightly with Olitalia Extra Virgin Olive Oil.

Coat a cast iron pan with Olitalia Extra Virgin Olive Oil and place it onto the grill. Heat for 10–12 minutes, or until the oil begins to lightly sizzle.

Add the seasoned peppers to the hot cast iron pan. Cook for approximately 12–15 minutes, stirring occasionally, until tender and lightly browned. Remove the peppers from the pan and set aside.

Add a little more Olitalia Extra Virgin Olive Oil to the pan if needed. Add the sliced onions and cook for 8–10 minutes, or until tender and slightly caramelized.

At the same time the onions are cooking, place the sweet fennel sausages directly onto the grill. Cook for approximately 15–20 minutes, rotating occasionally to ensure even cooking, until the internal temperature reaches 160°F.

Serve the grilled sausages topped with the peppers and onions. Enjoy on their own or in toasted Italian rolls.

Notes: Toasted Italian bread or rolls make an excellent serving option. For extra flavor, finish with grated Pecorino Romano cheese or fresh basil. A cast iron pan helps achieve a rich caramelization on the vegetables while grilling outdoors.
